As the current Chef-in-Residence at Intersect by Lexus in New York City, Barroso’s ride of choice is the Lexus LS. “The quality of the finishing of the interior of the car, the comfort, that makes the experience go beyond driving a car, it's something else,” he explains. These same qualities are evident in Barroso’s kitchen, where each ingredient enhances the others, creating a unique and powerful experience.
Having honed his craft in some of Europe’s most innovative restaurants, Barroso moved to Santiago, Chile, where he established 040 to follow his own culinary path. “I have always thought, and this is why cooking is appealing to me, you have an infinite freedom to do as you please,” he says. This sentiment is echoed in the Lexus LX, which combines urban comfort and off-road spirit to give Barroso the freedom to pursue his vision on his own terms.

In his Lexus LX, Barroso traverses the rugged Chilean terrain in search of new flavors. “Chile has a very diverse geography, it presents us with very different paths, desert, mountain, coast. LX is the right car, in my opinion, you feel you can access them all.” Today, he is seeking picoroco, a rare mollusc native to Chile. “I am not sure how they taste,” he concedes. “But I think that because of that, we should try something new.” Barroso’s enthusiasm for new ingredients, methods, and perspectives continually elevates his cooking. Like the Lexus LX and LS, the only thing he avoids is the conventional path.
